Thai-Basement Gladstone is seeking a dedicated and skilled Chef to join our dynamic culinary team. In this role, you will be responsible for delivering authentic and high-quality Thai cuisine that reflects the rich flavours and traditional techniques of Thailand. You will oversee daily kitchen operations, ensure food safety and hygiene compliance, train and mentor kitchen staff, and contribute to the continuous refinement of our menu. Tasks & responsibilities

  • Oversee the quality of dishes throughout all stages of preparation and presentation, ensuring consistency with Thai-Basement's high standards.
  • Select, train, and mentor kitchen staff to ensure proficiency in preparing authentic Thai cuisine and adherence to kitchen standards.
  • Collaborate with management, dietitians, and both kitchen and front-of-house staff to address any food preparation concerns and meet customer expectations.
  • Develop menus that highlight Thai cuisine, while estimating food and labor costs and managing the procurement of food supplies to maintain quality and availability.
  • Prepare and cook dishes according to the menu, ensuring authenticity and attention to detail in the presentation of each dish.
  • Enforce hygiene regulations and procedures to maintain a clean, safe, and sanitary kitchen environment.
  • Demonstrate advanced cooking techniques and provide guidance to kitchen staff on optimal cooking procedures and practices.
  • Implement proper food freezing and preservation techniques to ensure freshness, minimize waste, and optimize resource management in the kitchen.

Qualifications & experience

  • Relevant qualifications in commercial cookery and a minimum of 1 year of proven experience as a Chef, ideally within a Thai restaurant or establishment specializing in Thai cuisine.
  • In-depth knowledge of traditional Thai ingredients, spices, cooking techniques, and regional recipes.
  • Demonstrated ability to work effectively in a fast-paced kitchen environment while managing multiple priorities.
  • Strong organizational and time management skills, ensuring smooth kitchen operations and timely service.
  • Excellent communication and leadership skills to supervise and support kitchen staff efficiently.
  • Comprehensive understanding of food safety regulations and kitchen hygiene standards, with a commitment to maintaining compliance at all times.
